Cook Bacon, set aside to crisp, then crush. Cook hamburger, then drain. Cook onions till transluscent.
Drain all beans and add to crock pot. The choice of beans you use doesn’t really matter but you want about 6-7 different varieties.
Add bacon, hamburger, and onion to crock pot. Add ALL remaining ingredients. Stir. Cook on slow for several hours to overnight. Stir regularly.
You can’t really overcook this dish so the longer the better as more time will soften the beans and blend the flavors better. Cooking it on slow overnight or all day is preferred, but it can be ready in as little as 3 hours.
